How about a complete meal cooked in your slow-cooker ? Not mixed, each on it's own, with no flavors mixed – including "baked potatoes" !

This is the first time I've tried anything close to this Layered Slow-Cooker Dinner and I had no idea what to expect. Disappointed I was not – definitely not!

I think this might even be my new method of cooking. Especially when I do not feel like spending a lot of time in the kitchen, which does happen quite a lot during Summer.

However, I am sure I am not the only one who hates being in the kitchen during Summer !

On the menu we had :

  • Hong Kong Chicken
  • Baked Potatoes (served with Sour Cream and Spring Onions)
  • Sweet Honey Carrots
  • Basil Green Beans

I opened the top packages a little halfway through and gave the veggies a little stir using a spoon – so as not to tear the aluminum foil.

Both vegetables had only enough liquids etc to flavor, other than that it cooked in it's own juices.

The Potatoes were cooked soft, but still firm.

Delicious combination ! Only one thing, the **Green Beans** were cooked too long, you might want to add them halfway through and not at the beginning.

Layered Slow-Cooker Dinner

Prep Time 20 minutes

Cook Time 4 hours

Total Time 4 hours 20 minutes

Ingredients

HONG KONG CHICKEN:

  • 900 gr Chicken Fillets, cut in half if large ( 2 pounds )
  • 1 cup Coca-Cola, original
  • 1 TB Soy Sauce
  • 1 TB Golden Syrup (or Honey)
  • 1 t Salt

BASIL GREEN BEANS:

  • 2 TB Unsalted Butter
  • 1 Onion, chopped or sliced
  • 2 t Garlic, crushed
  • 2 cups Green Beans
  • 1 TB Basil, chopped finely
  • Salt and Black Pepper, to taste

SWEET HONEY CARROTS:

  • 1 1/2 cups Carrots (I use small cubes)
  • 2 TB Unsalted Butter, melted
  • 2 TB Honey
  • 1 TB Caster Sugar (Superfine Sugar)
  • 1 TB Red Wine Vinegar
  • Salt and Pepper, to taste

BAKED POTATOES:

  • 6 Potatoes, medium, scrubbed clean and pierced several times
  • 1 TB Olive Oil
  • 1 t Coarse Sea Salt
  • Sour Cream, to serve (optional)
  • Spring Onions, chopped, to serve (optional)

Instructions

  1. HONG KONG CHICKEN: Place the Chicken Fillets on the bottom of a large slow-cooker
  2. Combine the remaining ingredients and pour over the Chicken

  1. BASIL GREEN BEANS: Saute the Onion and Garlic in the Butter until soft, add the Green Beans and Basil – stir-fry 1 minute
  2. Remove from heat and season to taste
  3. Triple fold a large enough piece of aluminum foil – place the Beans in the center and fold all sides upwards (to form a bowl) and then close the tops tightly, so that no juices will leak out – keep aside

  1. SWEET HONEY CARROTS: Place the Carrots on a triple folded piece of aluminum foil {as per the beans} – fold slightly to resemble a bowl
  2. Combine the remaining ingredients and pour over the Carrots – close the aluminum foil – keep aside

  1. BAKED POTATOES: Rub the Potatoes with Olive Oil and sprinkle generously with coarse Sea Salt
  2. Triple fold a large piece of aluminum foil again – place the Potatoes in the center and fold close

How To Layer The Slow-Cooker Dinner:

1.) Place the Potato package on top of the Chicken

2.) Followed by the packet of Beans (see note in post re Green Beans) and the packet of Carrots

3.) All fits nicely in the Slow-Cooker

4.) Cover with the lid and cook on HIGH for 4 -5 hours or 7 – 8 hours on LOW

Notes

  • Servings are adult sized
